Espadin agave has long, sharp, and thin leaves like swords (spadas in Spanish). It is the most used and the one with the highest production since its maturation time is relatively short when compared to other varietals; it takes about 8 to 10 years to mature. Once it is ready, it is cooked in an open-fired oven, giving it a fine, smokey taste.
Production is limited each year, and this boutique Mezcal has an amazing taste.
It provides slightly sweet, herbal notes, followed by flavors of citrus and spices.
